These Chocolate Marshmallow Cookies are soft, puffy chocolate cookies topped with melted marshmallow and rich chocolate ganache.
“Mom, your singing sounds like a monkey wrestling an elephant.”
I suppose I should have been offended. Afterall, I have a tragic history in regards to singing.
But when my 10-year-old daughter said this to me as I hummed the theme to the Star Trek (rebooted) movie (the first in the series with Chris Pine, my only celebrity crush), I was not offended.
I was confused. What does a monkey wrestling an elephant sound like? How did she even come up with this metaphor? She is an aspiring author, and her wordplay IS impressive. So I stopped thinking about primate and pachyderm sounds and took her to bed, where I kissed her goodnight and told her that I loved her.
And I thought about these Chocolate Marshmallow Cookies and how they are her favorite and how I would still make them for her, despite her zoo-inspired insults.
These cookies are so fun to make and to eat. First, you make the chocolate cookies, which are like soft, chocolate puffs with slightly crispy edges.
You just bake these for 7 minutes.
Then a smooth, cloud-like marshmallow is placed on top of each cookie and melted slightly in the oven.
The marshmallows will puff up, but will sink as the cookies cool.
Once the cookies are cool, they’re topped with a dollop of chocolate ganache for silky, rich finish. And oh man, are they good!
Just look at this melty gooey goodness!
These are my family’s new favorite cookies. And despite the insults I continually get (Mom, you are so old. Mom, you are so slow. Mom, your singing sounds like a monkey wrestling an elephant), I will keep making these cookies. But I might just eat them all myself. Unless the children apologize and give me a big hug. Or clean a toilet. Either way 🙂

Soft, puffy chocolate cookies topped with melted marshmallow and rich chocolate ganache.
- 1/2 cup butter
- 1 cup sugar
- 1 egg
- 1 tsp. vanilla
- 2 cups flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup baking cocoa
- 20-24 jumbo marshmallows
- 1/2 cup heavy whipping cream
- 1 cup semi-sweet chocolate chips
Heat oven to 350 degrees.
Cream butter and sugar. Add egg and vanilla and mix well.
Add the rest of the flour and mix well. Dough will be soft.
Using a small (approximately 1 tsp.) cookie scoop, place dough 2 inches apart on a greased cookie sheet, or silicone or parchment-covered cookie sheet. Bake for 7 minutes.
While cookies are baking, cut the jumbo marshmallows in half using a pair or kitchen shears or regular scissors. After the cookies have baked for 7 minutes, remove them from the oven and place one cut marshmallow in the center of each cookie. Return the cookies to the oven for 3 more minutes. (The cookies will be baked for a total of 10 minutes).
Remove from the oven and let the cookies cool on the pan for about 10 minutes. Then transfer to a wire rack to cool completely.
While cookies are cooling, heat the heavy whipping cream on the stove to boiling. As soon as it boils, remove from the heat and add the chocolate chips. Let the chocolate chips sit in the hot cream for five minutes. Then stir until everything is smooth and glossy. Let cool slightly, then place a dollop on top of each cookie and spread as desired.
