There was this awesome Indian restaurant in Provo, Utah called “Bombay House.” I loved this restaurant. Being too poor to go there myself, I had to wait for somebody to ask me out and take me there. Apparently the men in college were also poor, so I rarely got to go there. In fact, I think I only went twice. But man, I loved that place.
The thing I remember most from Bombay House? The Mango Lassi. (It is pronounced “law-see.”) The first time I had it, I was in heaven. I had never tasted something like it. What was this magic?
Turns out, there was no magic, and the recipe was surprisingly simple. It mostly involves yogurt and mangoes. Since then, I have discovered that there are many different types of lassi. Today I am sharing with you another one of my favorites–Strawberry Lassi.
All it takes is some fresh strawberries, plain yogurt, sugar, and some optional ice. If you are cutting back on sugar, you can also use Stevia.
It is the perfect complement to Indian food, which can often be quite spicy. Just drink some lassi after that hot curry, and your mouth will be refreshed and ready for that next bite.
- 2 cups fresh strawberries
- 1 cup plain yogurt not Greek
- 2-4 Tbsp. sugar or 4 packets of Truvia
- 1/2 cup ice optional
- Put all ingredients in the blender.
- Run the smoothie cycle or blend until smooth.
- Serve immediately.
