Real lemons are the star of this shockingly delicious Fresh Lemon Ice Cream!
Have you ever had lemon ice cream? If not, you are truly missing out! One of the first ice cream flavors I ever developed was Lemon Meringue Pie (found in my cookbook, Ice Cream Inspiration). It was so good, that I knew I had to develop more lemon ice cream recipes!
Soon after followed Lemon Raspberry Cheesecake, and Lemon Gingersnap (also in the cookbook).
Here is a classic lemon ice cream recipe you can use as a base, and then create your own flavors with add-ins. But honestly, this lemon ice cream is SO GOOD that it doesn’t need anything else added to it. I could eat it all day long.
Let’s get to it! All you need are a few simple ingredients, a blender, and an ice cream maker!
Ingredients for Fresh Lemon Ice Cream
Lemon zest
Lemon juice
Granulated sugar
Light corn syrup
Whole milk
Heavy whipping cream
Kosher salt
How to make Fresh Lemon Ice Cream
Zest three lemons into a blender.
Add the granulated sugar to the blender with the lemon zest and blend for about 10 seconds.
Squeeze the lemons to get 3/4 cup lemon juice.
Add the juice and the rest of the ingredients to the blender and blend for about 20 seconds.
Refrigerate for two hours, then pour into your ice cream maker and follow the manufacturer’s directions.

Fresh Lemon Ice Cream
Fresh Lemon Ice Cream made with with lemon zest and lemon juice. No artificial flavorings or colorings.
Ingredients
- 3 lemons, washed
- 1 cup plus 2 Tablespoons granulated sugar
- 1/4 cup light corn syrup
- 3/4 cup freshly-squeezed lemon juice
- 1 cup whole milk
- 2 cups heavy whipping cream
- Pinch of kosher salt
Instructions
- Zest the lemons into a blender.
- Add the granulated sugar to the blender with the zest and process for about 10 seconds.
- Add the remaining ingredients and blend for about 30 seconds.
- Place in the refrigerator to chill for two hours.
- Pour into your ice cream maker and follow the manufacturer's directions.
- When soft-serve consistency is reached, transfer to an airtight container and place in the freezer for four hours or overnight. You can also enjoy this straight from the ice cream maker as soft-serve ice cream.
