Super smooth and creamy Peanut Butter Chocolate Swirl Ice Cream is a peanut butter-lover’s dream come true!
If you are a peanut butter lover, then have I got the perfect ice cream for you! This is the smoothest, creamiest, softest, melt-in-your-mouthiest ice cream you will ever have. (I think I just invented the word “mouthiest.”)
This recipe only has five ingredients. The most important ingredient, of course, is the peanut butter. Now normally I try to use “healthy” ingredients around here. That means that all-natural peanut butter would be on tap for this ice cream. However, I read in Ben and Jerry’s ice cream recipe book NOT to use all-natural peanut butter. They don’t explain why, but it probably has something to do with fat separation, and maybe the fact that all-natural peanut butter is a little gritty, and that’s not a desired texture for ice cream. Whatever the case, I decided to trust the experts and just use regular, homogenized peanut butter.
How to make Peanut Butter Chocolate Swirl Ice Cream
First, you’ll need to blend one cup of peanut butter with 3/4 cup of sugar. I used a hand mixer.
Then you’ll add in 1 1/2 teaspoons of vanilla and 1 cup of whole milk. Blend it on low speed until everything is smooth.
Lastly, you’ll add 2 cups of heavy whipping cream, but instead of using the blender, you will whisk it by hand.
Once that is done, pour it into your ice cream maker and follow the manufacturer’s directions. I recommend the Cuisinart ICE-21 1.5 Quart Frozen Yogurt-Ice Cream Maker.
While your ice cream is churning, it’s time to melt some chocolate chips. Just add about 1/4 cup to a small saucepan on the stove and melt over low heat until liquid. You can add a teeny bit of vegetable oil (like 1/4 tsp.) to make the chocolate more pourable if desired. Alternately, you can melt the chocolate chips in the microwave on the defrost setting, stirring every 30 seconds.
When the ice cream is ready to be transferred to your airtight freezer container, simply drizzle the melted chocolate over the ice cream in layers. Then cover and freeze for several hours, or overnight.
