This no-bake cookie recipe for Cashew Cornflake Clusters will be your new favorite! With just butterscotch chips, cashews, peanut butter, and cornflakes, you'll have irresistible cookies in no time!

  • 11 ounces butterscotch morsels (one standard bag)
  • 3/4 cup creamy peanut butter
  • 4-5 cups cornflake cereal
  • 1/2 cup roasted, salted cashews
  1. Line a cookie sheet with parchment paper or a silicone baking mat.

  2. In a large pot on the stove, add the butterscotch morsels and creamy peanut butter. Stir constantly over medium heat until everything is melted and well incorporated.

  3. Remove from the stove and gently fold in the cornflakes and cashews.

  4. Using a medium or large cookie scoop, drop the cookies on your parchment or silicone mat-lined cookie sheet. You can place them as close as you need to get all of them to fit.

  5. Put the cookies into the refrigerator (or other cold place) for 30 minutes to firm up before eating.
