Preheat your oven to 400 degrees F.

Lightly spray a 9x13 pan with cooking spray.

Wash your zucchini. Cut off both ends and slice the zucchini in half length-wise. Scoop out the soft middle portion with a spoon. Discard, or save for another use.

Saute the onions and peppers in a small amount of olive oil over medium heat in a medium-sized frying pan. When onions are translucent, remove the onions and peppers from the pan.

Add the hamburger to the same pan and cook until brown. Remove the oil, then add the onions and peppers back into the pan.

Pour the Simply Organic Red Enchilada Simmer Sauce over the meat mixture and stir well. Let simmer over low heat for 5-10 minutes.

Place the prepared zucchini inside the 9x13 pan. Scoop the meat mixture into each zucchini half. Sprinkle with shredded cheese.

Cover with foil and bake for 25 minutes. Then remove the foil and bake for another five minutes.

Garnish with cilantro if desired and serve.
