Roasted Asparagus

  • 1 lb. asparagus spears medium thickness
  • 1 Tbsp. olive oil
  • Kosher salt
  • Freshly grated black pepper optional
  • Lemon juice optional
  1. Preheat oven to 400 degrees.
  2. Rinse the asparagus.
  3. Break the tough ends off and discard.
  4. Lay the asparagus on a foil-lined pan.
  5. Drizzle olive oil over the asparagus and roll the spears back and forth until they are well-coated with olive oil.
  6. Sprinkle with salt and pepper.
  7. Place pan in the oven and roast for 8-10 minutes, until lightly browned and tender when pierced with a fork.
  8. Serve immediately with a drizzle of lemon juice if desired.
