Mango Black Bean Salad with Honey Cumin Vinaigrette

Ingredients
For the salad
  • 1 head Romaine lettuce, cut into bite-sized pieces
  • 1 pint cherry tomatoes, halved
  • 4 carrots, peeled and julienned, or sliced thinly
  • 1/4 red onion, thinly sliced
  • 2-3 mangoes, cut in chunks
  • 1 can black beans, drained and rinsed
  • cilantro (optional for garnish)
For the vinaigrette
  • 1/4 cup lime juice
  • 1/4 cup rice vinegar or red wine vinegar
  • 2-4 tablespoons honey, to taste
  • 1/4 teaspoon ground cumin
  • 2 teaspoons olive oil
  • salt and pepper to taste
Instructions
  1. Add the chopped lettuce, tomatoes, carrots, red onion, mangoes, and black beans to a large salad bowl and toss together. Refrigerate until ready to serve.

  2. Add the lime juice, vinegar, honey, ground cumin, olive oil, and salt and pepper to a jar. Cover with a lid and shake well. Refrigerate until ready to serve. Pour over salad just before serving, or let people add to their individual portions.
