Ingredients
  • 1 1/2 cups whole wheat flour
  • 1/4 cup all-purpose flour
  • 2 tablespoons ground flax seed
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 1/2 cups non-fat milk
  • 1/3 cup canola oil
  • 1 teaspoon vanilla
  • 1 egg
Instructions
  1. Mix all the dry ingredients together in a large mixing bowl.

  2. In a separate medium-sized bowl, add all the wet ingredients and mix well.

  3. Pour the wet ingredients into the dry ingredients and gently stir just until everything is moistened. It will be slightly lumpy. Don't over-stir, or your waffles will develop gluten and become tough.

  4. Put 1/4 cup of the batter into a hot waffle iron and cook until edges are slightly brown.

  5. Serve with your choice of toppings, like fruit, whipped cream, Nutella, or syrup.

Recipe Notes

To make these waffles low-sugar, replace half of the milk with heavy whipping cream, and replace the sugar with an equal amount of xylitol, or with 3 packets of Truvia/PureVia.
