Whip up these Easy Mini Cheesecakes in no time with just a cookie base and fruit topping. Perfect for weddings, baby showers, and every occasion!

Ingredients
  • 18 vanilla wafers or nine Oreo cookies, split in half with the frosting removed
  • 2 (8 ounce) packages cream cheese
  • 2 tablespoons flour
  • 3/4 cup sugar
  • 2 eggs
  • 1 Tbsp. lemon juice
  • 1 tsp. vanilla
  • fruit (or other) topping of your choice
Instructions
  1. Preheat oven to 350 degrees.

  2. Place one vanilla wafer or Oreo half in the bottoms of 18 cupcake liners.

  3. Mix all the other ingredients on low speed using a hand mixer (except the fruit topping) until creamy.

  4. Spoon into the cupcake liners, filling each about 2/3 full.

  5. Bake for 18-20 minutes.

  6. Cool and top with fruit, nuts, whipped cream, chocolate or caramel sauce, etc.
