Berry Topping for Ice Cream

Ingredients
  • 1/4 c. granulated sugar
  • 1 1/2 tsp. corn starch
  • 1/4 c. water
  • 2/3 c. blueberries blackberries, or raspberries (or a combination of all three), fresh or frozen
  • 1 1/2 tsp. lemon juice
Instructions
  1. Combine sugar and corn starch in a pan on the stove over medium heat. Gradually stir in the water until smooth.
  2. Add berries and lemon juice. Bring to a boil, then reduce heat to low and simmer, uncovered, until slightly thickened.
  3. Slightly mash the berries with a potato masher, or pour the whole mixture into a blender and puree. Strain if desired.
  4. Let mixture cool before adding to ice cream.
