This super-food Spinach Blueberry Salad with Orange Poppy Seed Dressing is amazingly delicious and healthy. Quick and easy to make, and delicious to eat!
When I was a kid, I had school lunch every day. Mostly it was delicious. I still remember the amazing mashed potatoes and the clover rolls topped with sugar and cinnamon. We had real lunch ladies back then who made everything fresh right there at the school. They had super powers, because they could hold hot pans with their bare hands. (At least that’s what I remember). But one thing they completely ruined–one thing that was so unappetizing that literally NOBODY ate it–was the cooked spinach. It laid there in an unsightly, disgusting heap on our trays. It was offensive in every way. The unholy dark color that defied description–kind of like when you mix all your water colors together. The putrid smell. The slimy consistency. It was no wonder the spinach industry hired Popeye to try to get people to eat the stuff.
I don’t remember when I found out that the spinach I had been served as a child was not spinach in its natural state. Spinach, it turns out, was vibrant and crunchy! Not only that, it had an extremely mild flavor, devoid of any and all forms of nastiness! What a “eureka!” moment this was for me! Ever since then, I have had a love affair with spinach. It’s gorgeous. It’s delicious. It’s super healthy. Instead of being something to fear, spinach is something to celebrate!
Let’s have a party right now with this Spinach Blueberry Salad, and throw on some Orange Poppy Seed Dressing, just for fun.
This salad is SUPER simple to make. All you need is some fresh spinach, blueberries, sliced almonds, and feta or cotija cheese.
Now we need to make the Orange Poppy Seed Dressing. This is what really takes this salad over the top. You’ll just need some Greek yogurt, mayonnaise, apple cider vinegar, orange juice, poppy seeds, sugar, and orange zest. Just pop all those things in a jar and shake everything up. (The recipe with all the proportions is below). If you don’t want to use sugar, you can use some Stevia. One packet of Stevia is equivalent to 2 teaspoons of sugar. Just keep that in mind if you are substituting.
Plate the salad and then pour the super yummy dressing on top. Then go ahead and enjoy your super-food, Popeye-approved salad that will be loved by children and adults alike!
- 4 cups fresh washed spinach
- 1 cup fresh washed blueberries
- 1/4 cup sliced almonds
- 1/4 cup crumbled feta or cotija cheese
- 2 Tbsp. Greek yogurt
- 2 Tbsp. mayonnaise
- 1 tsp. apple cider vinegar
- 1/4 cup orange juice
- 2 tsp. poppy seeds
- 1 tsp. orange zest
- 1-2 Tbsp. sugar to taste
- Mix all the salad ingredients together in a large bowl.
- Place all the dressing ingredients together in a jar. Seal with a lid and shake well until everything is smooth and creamy.
