If you’ve ever grown snow peas, you wonder what the heck to do with them when it comes time to harvest! It seemed like a good idea to plant them, but now that they’re grown, it’s kind of a puzzle to figure out how to best use them.
Luckily, this snow pea stir fry recipe comes to the rescue! But first, how about a little tutorial on how to take care of that super tough string on snow peas?
This is a great job for kids to do! Pick up each snow pea and hold it so that the little peas inside are at the top. You want to hold the end without the little brown squiggly thing. (Do you love my technical terms?)
Just break off the end you are holding and start pulling along the top.
Pull all the way to the end and completely remove the tough string.
If you don’t want to take the time to do this, you don’t have to. Just be aware that there will be some tough, chewy parts in the stir fry. If you have very young, small snow peas, that string won’t be as tough and you can skip the “de-stringing” before you stir fry.
What’s the Difference Between Snow Peas and Sugar Snap Peas?
Snow peas are flat with very small peas inside (as you can see in my pictures above).
Sugar snap peas are snow peas that have been crossed with your standard garden pea. This makes them slightly sweeter than snow peas, but with a softer shell than garden peas. (You can eat the shell of both snow peas and sugar snap peas, but not garden peas).
This recipe uses snow peas, but you could also use sugar snap peas if you want.
O.K. Time to get frying!
Ingredients for Chinese Pork Stir Fry with Snow Peas
- 4 boneless pork chops
- 1 pound snow peas
- 1 1/2 cups water
- 1/4 cup soy sauce
- 3 tablespoons sugar
- 1/4 teaspoon ground ginger
- 2 tablespoons corn starch
- 2 tablespoons vegetable oil for frying
Chinese Pork Stir Fry with Snow Peas
How to Make Chinese Pork Stir Fry with Snow Peas
First, prep your snow peas by removing the tough string.
Then slice your pork chops into thin strips. (This is easiest to do if your pork chops are slightly frozen).
Then put a large skillet or frying pan and a little vegetable oil on the stove over medium-high heat.
Once the oil is hot, add all the pork and cook, stirring, for about five minutes, or until the pork barely has any pink left.
Mix the soy sauce, 1 1/4 cups of water, and sugar and pour over the pork chops.
Add the pea pods and ginger and cook quickly, stirring frequently, until the pea pods are tender-crisp (about five minutes).
Mix the corn starch and 1/4 cup of water together. Pour over the pork and pea pods and cook until thickened, about two more minutes (or less).
Serve over rice. (Japanese rice is my favorite. You can learn how to make it both in a rice cooker and on the stove top here) You can also serve with brown rice.
I also like to garnish this with some chopped green onions. Cashews would also be great with this! Sesame seeds and red pepper flakes are classic garnishes as well.
How to Dress up Pork with Snow Peas
This simple recipes lends itself wonderfully to all kinds of additions!
Here are some things you could add:
- Red bell pepper
- Bamboo shoots
- Red onion
- Fresh ginger
- Fresh garlic
- Shiitake mushrooms
If adding any of these ingredients, just throw them in at the same time as you add the snow peas.

- 4 pork chops, thinly sliced
- 1 pound snow peas
- 1 1/2 cups water (divided)
- 1/4 cup soy sauce
- 3 tablespoons sugar
- 1/4 teaspoon ground ginger
- 2 tablespoons corn starch
- 2 tablespoons vegetable oil for frying
Instructions
- Place a large skillet or frying pan on the stove over medium-high heat. Add the two tablespoons of vegetable oil.
- When the oil is hot, add the sliced porked chops and stir fry for about five minutes, or until the pork is almost cooked through.
- Add 1 1/4 cups of water, 1/4 cup soy sauce, and 3 tablespoons sugar.
- Add the snow peas and ground ginger. Stir fry until pea pods are tender-crisp (about five minutes).
- Mix the 2 tablespoons of corn starch with 1/4 cup of water. Pour over the pork and pea pods and stir continuously until the sauce thickens.
- Serve with rice or Chinese noodles.
