There you are, sitting innocently at a stoplight, when suddenly, the ground begins to shake. Your first thoughts concerning an earthquake are quickly supplanted by booming base and the rattling of everything loose in your vehicle. You look over at the car next to you and are met with only tinted windows. There is seemingly nobody to receive your looks of scorn. You wonder to yourself how people could be so inconsiderate. Do they not understand that everyone within a three-mile radius can hear their music? Do they not know that they are shaking fillings loose for everybody who has the misfortune to be bounced along next to them? In a small moment of compassion, you consider the imminent hearing loss of the occupants of the vehicle from which the soul-shaking music is coming.
I have often thought to myself, “What is to be done?” After many years of applying my brain to this problem, I have come up with a solution. Wouldn’t it be hilarious if I fought back by rolling down my windows and blasting The Mormon Tabernacle Choir? Can you just imagine a shocking, “HALLELUJIA!” from Handel’s Messiah ringing out above the pumping base of the neighboring car? Then I would look over at those mysterious tinted windows, smile, and wave. Oh, if only I were so brave!
Do you know what else is shocking? This Zucchini Orange Bread. Zucchini is one of the most versatile vegetables known to man. It can be used in savory and sweet dishes with equal aplomb. This doctored-up zucchini bread uses half whole wheat flour and orange essential oil. (You can use orange extract in place of the oil if you wish). I love the added texture and depth of the whole wheat, and the surprising hint of orange.
If you do use essential orange oil, please make sure that your brand is approved for internal use! If not, use orange extract instead. I use doTERRA essential oils.
If you have zucchini coming out your ears, this bread is the perfect solution! Plus, it’s healthy-ish 🙂
- 3 eggs
- 1 cup oil
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 cups grated zucchini
- 3 tsp. vanilla
- 10 drops Wild Orange Essential oil (or 2 tsp. orange extract)
- 1 Tbsp. grated orange peel (optional)
- 1 tsp. salt
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 cup walnuts (optional)
- 1 1/2 cups white flour
- 1 1/2 cups whole wheat flour
- Beat eggs, then add oil, sugar, zucchini, vanilla, orange oil (or extract) and orange peel. Mix well.
- Add all the dry ingredients and mix well.
- Grease two large loaf pans and line the bottom with waxed paper. Pour the batter evenly between the two pans.
- Bake at 325 degrees for one hour.
