Ahh, the sights, sounds, and flavors of fall. Can’t you just imagine being in the crisp, autumn air up in Canada? There are still patches of snow on the ground from the season’s first storm, and orange and yellow leaves float to the ground as the sun weaves its rays through the branches of the maple trees. You take a deep breath and inhale that wet, woodsy, earthy smell. You’re wearing your best flannel, your most utilitarian boots, and you have a hatchet in your hand. Wait, I don’t think you need a hatchet to harvest maple syrup. Hold on a minute. Some Canadians are yelling at me. Oh, the maple syrup harvest is actually in the spring? Well, that changes things only slightly. Leave the snow on the ground, take all the leaves off the trees, and get rid of the hatchet, and the whole thing still works for me. I don’t care what you think–“maple syrup” still says “fall” to me.
In honor of my snooty, American stubbornness with this issue, I present to you today my recipe for Maple Ice Cream with Caramelized Walnuts, in the fall. Keep in mind that you must use real maple syrup here. No Mrs. Butterworth’s. By the way, I found out during my research on maple syrup that you have to have actual maple syrup in the syrup in order to have the word “maple” on the bottle of syrup. Next time you go to the store, note that all the fake syrups will have titles including “butter,” or “table,” or “pancake,” but not maple. That’s because they are full of garbage like high fructose corn syrup. We eschew high fructose corn syrup here. So pony up the dough and get the good stuff. Now go put on your favorite flannel shirt and get to work on this ice cream!
