This classic Cherry Crisp recipe is the perfect fruity dessert! Wholesome and delicious, you could practically eat it for breakfast!
It’s that time of year when fruit is everywhere! Summer is winding down, and harvest time is near. That means it’s time for all kinds of fruity desserts, like this classic Cherry Crisp.
The great thing about this recipe is that it is so easy to whip up. The bad thing is how quickly it disappears 🙁
Before we get started, let’s address the problem with cherries.
The pits.
How do you remove the pits quickly, efficiently, and without getting juice everywhere? Cutting them out one by one is not the answer to this question. But I do have two solutions for you.
- Get a cherry pitter like this Norpro Cherry Pitter. You just drop the cherries in, press down on the plunger, and it pops the pit out.
2. Buy a bag of frozen cherries.
You’ll need 2 or 3 cups of cherries for this recipe. Once you have them pitted (or have opened your bag of frozen cherries), put them in a pan on the stove with some sugar, corn starch, and water. You will mix everything together, then bring to a boil over medium heat for about one minute, or until the sauce is thickened.
Set that aside to cool for just a bit while you make the topping of oats, brown sugar, butter, flour, and cinnamon.
Then just pour the cherry mixture into an 8×8 inch pan and sprinkle with the topping. Pop it into a 375-degree oven for 25 minutes. Sit back and just smell your kitchen. Mmmm.
When the Cherry Crisp is done, take it out of the oven and let it cool slightly (maybe 15-20 minutes) before serving. Whipped cream, and of course, Classic Vanilla Ice Cream are perfect toppings.
Make this perfect summer/fall hybrid dessert full of wholseome, delicious cherries and oatmeal. (Then have some for breakfast the next morning 😉 )
- 1/4 cup plus 2 Tbsp. sugar
- 1 1/2 Tbsp. corn starch
- 1/4 cup water
- 2-3 cups fresh or frozen pitted cherries
- 3/4 cup oats
- 2 Tbsp. packed brown sugar
- 1 Tbsp. butter melted
- 1 Tbsp. flour
- 1/4 tsp. cinnamon
- Mix the sugar, corn starch, water, and cherries in a pan on the stove over medium-high heat.
- Bring to a boil for about one minute, or until sauce is thickened. Remove from heat.
- In a separate bowl, mix the oats, brown sugar, melted butter, flour, and cinnamon.
- Pour the cherry mixture into an 8x8" baking dish.
- Sprinkle the oatmeal mixture over the top.
- Bake at 375 degrees for 25 minutes. Serve warm.
